Eggless Brownies


Today, I had a massive sweet tooth, but no eggs. What's a foodie to do?!
I searched the interwebs and found Eggless Brownies! Yea
I adapted the recipe from fellow blogger LickThyFingers: http://lickthyfingers.blogspot.com/2008/07/eggless-banana-chocolate-loaf.html

The only difference is that I added a 1/2 cup of white sugar, upped the oil to a 1/2 cup and it baked in a square pan. I also added cooking spray and sprinkled cinnamon sugar on the pan before pouring the batter in. Then, cooked on convection setting in oven for 20 min at 325 F.

Just put it in around 325 and take it out when the top has risen and firmed up with a slight crust. Insert a toothpick and if it comes out clean, it's done. Decadent, yet light tasting. It gets the job done. Goes really well with hot coffee.
